Application
CMC can be used as thickener, stabilizer, organizational improvers, gelling agent, non-nutritional leavening agents, water movement control agent, foam stabilizer and reduce fat adsorption.
It is soluble in water, and its aqueous solution is strongly alkaline; insoluble in ethanol and carbon disulfide.
